Spring is the time for fresh, tender asparagus. Today I’m adding them to fresh tomatoes with feta cheese. I am sauteing the asparagus in a little olive oil just a little bit, but you can steam, grill, or roast if you prefer. The goal is to limit the cooking so the result is bright green, tender asparagus, not over-cooked soft asparagus.
Add a chopped tomato or halved grape tomatoes with feta cheese. Additions and changes are easily made such as using goat cheese or adding cucumbers or peppers. It can be eaten in the summer with fresh cooked corn as an addition. Think of this as a base salad that can be adapted with whatever is in season. The salad is dressed with a special vinaigrette and placed in the refrigerator for at least an hour before serving.

Use organic when available. Serves 5
Spring Asparagus Tomato & Feta Salad
Ingredients
Salad Dressing
- 1/4 cup rice vinegar
- 1/2 tbsp white sugar
- 1/2 tsp salt
- 1/4 tsp sesame oil
- 1 tbsp olive oil
Salad
- 3/4 lb fresh asparagus cut into 1" pieces
- 1/2 tbsp olive oil
- 1 crushed garlic clove
- 4 oz crumbled feta cheese (or goat cheese)
- 1 large tomato cut into bite-sized pieces
- 1 green onion diced
- 2 tbsp chopped fresh parsley
Instructions
Salad Dressing
- Whisk together the rice vinegar, white sugar, sea salt, sesame oil, & olive oil in the bottom of a salad bowl
- Set aside
Salad
- Saute asparagus and crushed garlic clove in 1/2 tbsp olive oil for 3 minutes
- Remove from heat and drain
- Add asparagus, feta, tomato, green onion, and parsley to the bowl with the dressing
- Toss to coat
- Cover and place in refrigerator for 1 hour before serving
