Variations on Lemony Avocado Toast

We’re in between holidays and most of us are a little hurried.  Have you had too much fancy food? Too many calories?  Today let’s talk about a simple breakfast, snack, or lunch – avocado toast. Avocado toast is not rocket science. It pretty much is the name – toast and avocado but it can also be much more.  What type of bread do you use? Do you just slice the avocado and or do you mash it?  Personally I have tried it many different ways. I’ve sliced avocado and also mashed the ripe avocado before spreading it on toast.

 

 

Lemony Avocado Toast

 

 

Let’s first start with an upgrade to the mashed avocado.  Today we’ll upgrade the toast with a pinch of cayenne pepper, fresh cilantro, lemon juice and zest, and a few seeds.  I’m using chia seeds with all their nutritional benefit.  You could also use poppy or sesame seeds. If you aren’t a fan of cilantro or have trouble finding it, you can substitute parsley or mint fresh herbs. Now think of your favorite breakfast foods:  eggs, bacon, smoked salmon.  How about a handful of baby spinach on your sandwich? Slice of tomato?  Then consider additions like pickled onion, sriracha sauce, or any of your favorite taste enhancers.  Like a sprinkle of feta or goat cheese? You can make all kinds of variations with any of these additions. Feel free to add or delete ingredients to meet your needs for a superb taste!

Lemony Avocado Toast

Lemony Avocado Toast can be adapted so many ways. Eat is alone or with an egg, pickled oions, or your favorite condiment.

Ingredients

  • 2 slices whole grain bread
  • 1/2 Haas avocado
  • 2 tbsp chopped fresh cilantro ( or other fresh herbs)
  • 1 ltsp fresh squeezed lemon juice or to taste
  • 1//4 tsp fresh grated lemon zest
  • 1 pimch cayenne pepper
  • 1 pinch salt
  • 1/4 tsp chia seeds
  • Optional ingredients like egg, baby spinach, pickled onion, sriracha sauce, feta or goat cheese, smoked salmon, etc.

Instructions

  •  Toast bread slices
  • Mash avocado in bowl with fork
  • Add chopped cilantro, lemon juice & zest, cayenne pepper, and salt
  • Mix well
  • Spread avocado mash on toast
  • Sprinkle seeds on top
  • Optional add egg
  • Optional add pickled onion
  • Optional add sriracha sauce
  • Optional add smoked Atlantic salmon
  • Optional add honey
  • Optional add goat cheese
  • Optional add bacon

    1. Avocado by itself can be blah. Mash and add what you like. I love avocado with lemon, garlic powder, and tomatoes. I invented avocado BLT a couple of years ago and it’s additive.
