Spring Asparagus, Tomato & Feta Salad

Spring is the time for fresh, tender asparagus. Today I’m adding them to fresh tomatoes with feta cheese. I am sauteing the asparagus in a little olive oil just a little bit, but you can steam, grill, or roast if you prefer. The goal is to limit the cooking so the result is bright green, tender asparagus, not over-cooked soft asparagus.

Raspberry Baby Greens Salad

Spring is the perfect time to enjoy a green salad. You may have noticed I like to add fruit to my green leaf salads. Nothing says spring like fresh raspberries. Today’s salad is so simple but oh so delicious. Raspberry season officially starts in June although most grocers has raspberries almost year round. Start with a baby greens mix from the store and add avocado slices, fresh raspberries, and a sprinkle of pecans. Top with a balsamic vinaigrette and your salad is ready to eat. Fast, easy, nutritious, and delicious all describe this simple salad.

Tasty Asparagus & Strawberry Spring Salad

I’ve another great asparagus recipe  for you.  This veggie is packed full of vitamins including vitamin A, C, E, K, and B6. If that isn’t enough for you, how about the fact that asparagus can help you lose weight? It is low in calories but high in insoluble fiber, which will help you feel full longer. Asparagus also contains high levels of the amino acid asparagine which helps flush fluid and salt from your body (which can actually help prevent UTI’s). And along those lines asparagus can also help your digestive health and prevent bloating!

Shrimp & Asparagus Salad With Oranges

When you need a lighter, healthy meal, an entree salad can hit the spot and make you smile.  My shrimp and aspargus salad with oranges is a perfect example. It’s a delightful spring salad with fresh greens, orange segments, asparagus,  shrimp, and a lovely citrus vinaigrette. It’s fast and so tasty.  In 20 minutes, you can be sitting with your family and friends and enjoying the flavor.   You can serve a small version of this salad as a first course, but I love it as an entree.  I’m using quick broiled shrimp, but you can also use any cooked shrimp like grilled, boiled,  or sauteed.

Strawberry Spring Salad

It’s only a couple of weeks until Easter and Passover.  Whether you’re planning a holiday meal or just looking for ideas for dinner, it’s hard to beat a simple salad of fresh mixed lettuce and fresh strawberries.  Right now Florida spring strawberries are still in the markets.
