Chicken and rice is served in many cultures with lots of variations in the recipe. I must admit I’ve never meet chicken and rice I didn’t like. This dish is an inexpensive meal which is comforting and filling. I used chicken thighs with bone and skin, but you could try it with other chicken parts. Use a Dutch oven, a large iron skillet, or a casserole dish. The meal can be served with broccoli, green beans, or a salad.

Chicken and Rice Casserole
Use organic when available. Serves 6
Chicken & Rice Casserole
Ingredients
- 6 bone-in, skin-on chicken thighs (about 4 oz each)
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 2/3 cup finely chopped onion
- 2 cloves garlic minced
- 1 1/2 cups uncooked long grain rice
- 3 cups chicken stock plus more if needed
- 1 tbsp chopped fresh parsley
- 1 lemon cut into wedges
- salt and pepper
Instructions
- Preheat the oven to 375 degrees F (190 degrees C)
- Heat oil in large Dutch oven over medium-high heat
- Sprinkle salt and pepper on thighs to taste
- Place chicken skin-side down in the Dutch oven
- Cook about 5 minutes until golden crisp and easily released from the bottom
- Flip chicken and cook other side for 3 minutes more
- Transfer to a plate and set aside (Chicken will not be cooked through at this point)
- Add butter to the Dutch oven to melt
- Add onion and cook about 3 minutes until translucent
- Add garlic and cook for 1 minute
- Add rice and stir for about 1 minute to toast and coat with drippings
- Stir in 3 cups stock and pepper and salt to taste
- Bring to a boil while scrapping any brown bits from bottom of pan
- Place chicken over rice
- Transfer chicken and rice to oven
- Bake for 45 to 55 minutes until all liquid has been absorbed and chicken is cooked through
- If liquid is absorbed before chicken or rice are cooked, add more stock and continue to bake
- Remove from oven
- Squeeze lemon juice over top of dish
- Garnish with fresh parsley
- Serve with broccoli, green beans, or a salad

That description of the cooking method had my mouth watering there Carol. I think when you added the garlic and three cups of stock I knew it was one to try. I’ll let you know how we did.
