Comforting Chicken and Rice Casserole

Chicken and rice is served in many cultures with lots of variations in the recipe. I must admit I’ve never meet chicken and rice I didn’t like. This dish is an inexpensive meal which is comforting and filling. I used chicken thighs with bone and skin, but you could try it with other chicken parts. Use a Dutch oven, a large iron skillet, or a casserole dish. The meal can be served with broccoli, green beans, or a salad.

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 4 oz each)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2/3 cup finely chopped onion
  • 2 cloves garlic minced
  • 1 1/2 cups uncooked long grain rice
  • 3 cups chicken stock plus more if needed
  • 1 tbsp chopped fresh parsley
  • 1 lemon cut into wedges
  • salt and pepper

Instructions

  • Preheat the oven to 375 degrees F (190 degrees C)
  • Heat oil in large Dutch oven over medium-high heat
  • Sprinkle salt and pepper on thighs to taste
  • Place chicken skin-side down in the Dutch oven
  • Cook about 5 minutes until golden crisp and easily released from the bottom
  • Flip chicken and cook other side for 3 minutes more
  • Transfer to a plate and set aside (Chicken will not be cooked through at this point)
  • Add butter to the Dutch oven to melt
  • Add onion and cook about 3 minutes until translucent
  • Add garlic and cook for 1 minute
  • Add rice and stir for about 1 minute to toast and coat with drippings
  • Stir in 3 cups stock and pepper and salt to taste
  • Bring to a boil while scrapping any brown bits from bottom of pan
  • Place chicken over rice
  • Transfer chicken and rice to oven
  • Bake for 45 to 55 minutes until all liquid has been absorbed and chicken is cooked through
  • If liquid is absorbed before chicken or rice are cooked, add more stock and continue to bake
  • Remove from oven
  • Squeeze lemon juice over top of dish
  • Garnish with fresh parsley
  • Serve with broccoli, green beans, or a salad
