Chicken and rice is served in many cultures with lots of variations in the recipe. I must admit I’ve never meet chicken and rice I didn’t like. This dish is an inexpensive meal which is comforting and filling. I used chicken thighs with bone and skin, but you could try it with other chicken parts. Use a Dutch oven, a large iron skillet, or a casserole dish. The meal can be served with broccoli, green beans, or a salad.

Chicken & Sausage Jambalaya
Today’s recipe is New Orleans spicy jambalaya. It is a one-dish meal with Spanish, French, and African influences. It usually has 3 proteins of chicken or pork, sausage (andouille, chorizo or smoked sausage), and seafood (shrimp or crawfish). Today we’re using chicken and andouille sausage with shrimp. If you are not able to obtain shrimp at this time, the chicken and sausage will still make a great hearty dish for the family.
