Banana Walnut Muffins
An easy to bake Banana Nut Muffin that's perfect for breakfast, for a snack or even as a dessert.

Ingredients

large ripe bananas mashed

cups
flour

tsp
cinnamon

baking powder

baking soda

salt

vegetable oil
1
egg
3/4
cup
sugar
1 1/2
cups
chopped walnuts or save a few half walnuts for decoration

tbs
brown sugar
1
tbsp
melted butter
Instructions
Preheat oven to 350 degrees F and grease 12 cup muffin pan or use liners
Mix bananas, sugar, and egg in a large bowl with a spoon
Add oil and mix well
Add flour, baking powder, baking soda, salt, cinnamon and 1 cup of nuts
Use spoon to mix to distribute flour and nuts; do not over mix
Spoon muffin batter evenly in 12 cups
In small bowl mix brown sugar, rest of nuts, and melted butter until nuts are coated
Add a spoonful of coated nuts to top of each muffin cup
Optional use a few half walnuts instead of pieces to decorate tops
Bake 20 to 23 minutes in oven until golden brown & toothpick in center comes out clean
Let cool in muffin pan for a few minutes
Remove to cooling rack to cool completely
