Ingredients
5cupsvegetable stockor chicken
1tbspground cumin
1teaspoonground coriander
1cupbrown rice
1bay leaf
1 cupbrown or green lentils
1/2 teaspoonblack pepper
1teaspoonsalt
2tbspolive oil
1largeonion thinly sliced or chopped
1lemon juiced and outer skin grated
1clovegarlic chopped
1dollopoptional Greek yogurt
Instructions
Combine stock, coriander, cumin, salt, and bay leaf in large pot
Heat to boiling on high
Add brown rice and lentils and stir
Saute onion in olive oil for 2 minutes
Add garlic and stir until onions are softened about 3 to 4 minutes
Add onions and garlic to rice and lentils
Cover and reduce heat to medium-low
Simmer for about 40 to 45 minutes or until rice is cooked
