Butternut Squash Soup
This is a thick, rich soup with tons of flavor. It's perfect for fall through winter.

olive oil

small onion, diced

celery stalk
2
garlic cloves, minced

cups
cubed butternut squash
2
medium potatoes peeled & cubed
salt and pepper to taste
1/4
tsp
smoked paprika
Pinch nutmeg

cups
low-sodium chicken or vegetable stock
Instructions
Place olive oil and celery, onion, squash, and potatoes in large pot
Saute about 5 minutes and add garlic
Combine with stock and seasonings
Simmer 20 minutes
Cool and blend in batches or use immersion blender
Garnish with herbs, yogurt, green onons, croutons or cheese, optional
Serve with crusty bread or whole grain crackers
