Fruit Salsa with Cinnamon Chips

Need a great appetizer filled with fresh fruit flavor? How about a great fruity dessert? Fruit salsa with cinnamon chips is the perfect answer.  Easy to make and loaded with the fruit of the season, fruit salsa is a great party food, dessert, or a snack.  I’m basing my salsa on fresh strawberries with apples and raspberries. Can’t find raspberries? Try a tropical twist with crushed pineapple. Yum! You can also substitute with the fruit of the season – peaches, nectarines, grapes, the list never ends.

Fiery Jalapeno Cheddar Grits

Several weeks ago I wrote about my childhood and my love of southern grits in the post of Low Country Shrimp and Grits. There are countless ways to serve grits. Today I’m recreating a spicy version I got recently at a restaurant down in Tarpon Springs, Florida, fiery grits.  It’s similar to the shrimp and grits but with more fire. You can use either the white or yellow corn grits, sharp cheddar, and fresh jalapeno peppers to create a side dish with a bite.

Crispy, Seasoned Arugula & Mango Salad With Pumpkin Seeds

I’m a salad lover any time of year.  Cooler weather I crave more spicy salads with arugula. On its own or mixed in with other greens, arugula makes a great salad with its peppery notes.  If you’re not a fan of arugula, try an organic baby salad mix containing arugula.  The peppery notes are toned down by the medley of flavors.  I went to Aldi to get a box of organic baby arugula but ended up buying baby arugula and spinach. I love baby spinach and had to try the combination. That’s my crispy base for the today’s salad. You can use organic baby arugula or a baby leaf mix including arugula.

Colcannon Irish Potatoes, Potatoes & Greens

Most Americans think corned beef and cabbage is the traditional Irish meal, but that’s far from the truth.  During The Great Famine, a period of mass starvation, disease, and emigration in Ireland between 1845 and 1852, the Irish were too poor to buy beef. Their diet was mainly potatoes and occasionally bacon. When disease ruined the potato crops, mass starvation and emigration resulted.  In America, the immigrants had more more money and began to buy beef.They transformed  St Patrick’s Day from a religious day into a celebration of their homeland with parades and a dinner of corned beef and cabbage.
