Creamy Carrot Soup For A Winter Meal

Carrot soup is an easy soup to make on a cold day yet rich enough to be a first course at a holiday meal.  There are many variations to carrot soup, but most use chicken stock and some type of milk for a rich creamy flavor.  Today’s recipe adds fresh ginger for a little zing in the taste.  I like a tablespoon of Greek yogurt on top of my bowl of soup but that  is optional.  My brother-in-law likes a touch of spicy like  a teaspoon of Harissa relish on top of the yogurt. (Harissa is a Moroccan condiment based on tomatoes and chili for medium heat.)

Creamy Basil Parmesan Tomato Soup

One of my favorite things is a delicious bowl of soup. I always like to start with a little saute of diced celery and carrots to start the base in today’s yummy soup. A generous amount of carrots and celery add an untraceable sweetness which balance the acidity of tomatoes. Easy Meatball Soup

I’m a huge soup fan. Start with a great broth, add fresh vegetables and herbs, and enjoy a fast, healthy meal.  Today let’s talk about meat ball soup. For a warm bowl of Italian comfort.  try this soup which is similar to Italian Wedding soup.  I enjoy eating delicious food, but you know I like to keep it healthy.  I’m using extra-lean ground beef with eggs and bread crumbs for my meatballs. The beef has great flavor and less fat. You could also use ground turkey or chicken.  Let the meatballs cook in the broth with pasta or potatoes and you have a tasty meal with crusty whole-grain bread or cheese toast.  I keep the meatballs smaller like 3/4″ to cook faster and to fit into your soup spoon.

Zuppa Toscana Soup

We’re making my “world famous” (yeah right) Zuppa Toscana soup (like you get at Olive Garden) for my friends lunch tomorrow.  Zuppa Toscana, “zuppa” means soup in Italian. “Toscana” refers to the Tuscany region of Italy. Therefore, “Zuppa Toscana” translates to “Tuscan soup” or “Tuscan-style soup.” Traditionally, this soup is made with lots of Italian sausage, veggies, beans, potatoes, olive oil, spices, and Italian bacon. My recipe is similar except in my version I use low-fat turkey sausage.  The only things I cannot add tonight are the kale and the heavy whipping cream. They have to be added tomorrow one hour before lunch.  This soup is naturally gluten free and grain free.  If you need a dairy-free soup, I suggest you substitute the solid white cream portion of a 1 can of full fat unsweetened coconut milk.  Add it at the very end just to heat through.
