Apple Peanut Butter Toast

I like toast for breakfast – all kinds of toast. I’ve shared avocado toast ideas, roasted beets & feta toast, and  even apple yogurt toast with dates.  Today I’m sharing a very easy breakfast or snack idea that is really tasty and nutritious, apple peanut butter toast.  It will please both children and adults with its taste and crunch. Whole Wheat Sweet Potato Muffins

I love a good muffin for breakfast.  Today’s recipe is a tasty, healthy muffin made with a baked sweet potato, whole oats, and whole wheat flour.  Add a little honey and a mix of spices for a delightful taste.  If you have a left over baked sweet potato, this is a great way to use your leftover and make an easy breakfast or snack. I like the topping which adds a little crunch of flavor.

Banana Walnut Muffins

I love a good muffin that doesn’t have too much fat.  I also love banana bread with its moist, rich texture and taste.  Today I’m sharing muffins made with ripe bananas and a sprinkle of walnuts.  If you can’t eat walnuts, like my sister, add pecans. I was lucky in my last food delivery that my carrots, celery, lettuce, grape tomatoes, and cucumbers were available.  I’ll enjoy them while I can. Read More

Tuna Stuffed Avocado

Tuna Stuffed Avocado is a terrific starter or lunch. I’m using pouches of tuna as pouch processing requires a shorter cooking time, which leaves the texture of tuna firmer, and results in a fresher-tasting product. You can use canned tuna too.  The tuna salad is not the classic one I’ve enjoyed since childhood, but it is full of flavor. Quick and easy to make with a few great ingredients, you’ll find you will use it many times for a spur of the moment healthy meal.

Avocado toast is not rocket science. It pretty much is the name – toast and avocado but it can also be much more.  What type of bread do you use? Do you just slice the avocado and or do you mash it?  Personally I have tried it many different ways. I’ve sliced avocado and also mashed the ripe avocado before spreading it on toast. Read More
