When I think of fall, I think of a new crop of luscious apples.  I like all apples, but my favorite all around apple is the Gala.  They are crisp and sweet and one of the best for apple sauce, pressing for cider, salads, and just eating it for a small dessert. January is a cold month even here in Florida.  Cold weather always makes me crave comfort food filled with vegetables, broth, and protein.  I just love a single pot meal.  Today I’m using a crockpot to make stewed chicken.  If you are wondering what the difference is between chicken soup and chicken stew, the main difference is the amount of liquid versus the ingredients.  In soup your ingredients are usually floating in the broth while the hearty stew is filled with chunks of vegetables and meat with some broth.  Often when I plan on making chicken soup, it is in reality a stew.

Slow Cooker Swiss Steak

Today I’m going back to my slow cooker to cook a delicious meal without spending hours in the kitchen. If you’ve never heard of swiss steak, it is a recipe that has been around for decades.  Swiss steak is made by braising, or slow-cooking a tougher cut of meat like round steak. The meat is traditionally tenderized by pounding with a mallet before slow cooking.  My mother always used cubed steak which does not need pounding. My recipe calls for cubed steak, but pounded round steak is great too.   First we’ll brown the meat and then add it to the crock pot with sauteed vegetables to simmer and make a mouth-watering tomato sauce.  You can adjust the vegetables to meet your family’s needs.

If you’re wondering what to cook while in quarantine, today’s pantry recipe requires ground meat, herbs, crushed tomatoes, and milk to make a go-to-sauce for pasta, stuffed peppers, and even lasagna.  Bolognese sauce is a meat sauce with tomatoes, carrots, celery, onion, and garlic. Most of us aren’t used to adding dairy to tomatoey, meaty sauces, but adding milk to your bolognese adds such a richer depth of flavor, and results in much more tender meat. Let’s make your home smell like autumn AND give you a tasty treat.  Today’s recipe is an extremely easy apple butter made in your slow cooker.  Put everything in and let it cook for hours.  The result is a yummy spread that can be used in so many ways this fall and winter.
