We’re in the hot days of summer, and now is the perfect time for a cold salad full of ripe veggies. Today’s recipe is easy Greek salad. Traditionally Greek Salad has English cucumber slices, ripe tomato wedges, thin slices of red onion, Kalamata olives, green pepper, and Feta with a dressing made from extra-virgin olive oil and red wine vinegar or lemon juice and seasoned with a little dried oregano. Simple, easy, and delicious, Greek salad is great for lunch or dinner. Classic Greek salad does not have lettuce, but it is a vegetable salad with all the flavor of summer.

Mexican Bean Salad
Whether you need a dish for Cinco de Mayo, or you’re just looking for a salad that will feed a group, Mexican Bean Salad is a hit with a wake up flavor. This is a wonderful, tasty, and colorful salad. It’s very attractive even in a clear glass bowl. The longer it marinates, the better the flavor. Left-overs are wonderful the second day.

Asparagus, fresh and green, means spring to me. I’m always happy when I see spring asparagus in the market. Today’s treat is an asparagus salad with a lemon vinaigrette. Start with the freshest asparagus you can find. Grill after tossing with a little olive oil and salt and pepper. Add spring baby lettuce, tomatoes, a little cheese, and even mushrooms if you’re in the mood.
Avocado & Strawberry Salad With Honey Basalmic Vinaigrette
Summer is a time when I indulge in lots of green salads and fresh fruit. Today’s salad is Avocado & Strawberry Salad with mixed baby lettuce leaves, cucumbers, grape tomatoes, onions, and edible flowers. Sweet strawberries and creamy avocado make a great combination. Mix in baby greens and edible flowers and it becomes a salad to remember. You can easily personalize it to fit your taste by changing greens to spinach or what’s in season. Cheese and pecans are optional for great crunch and taste. Top it with balsamic vinaigrette.
Artichoke Hearts, Romaine Lettuce & Blueberry Salad
I’m a great salad lover and like to add lots of healthy chewy produce to my salad. I alternate the type of lettuce I use to prevent getting bored. My favorite is Romaine but I also love baby greens, Boston, Bibb, spinach, and red leaf lettuce. Today’s salad is mostly Romaine with red leaf lettuce, artichoke hearts, cucumbers, grape tomatoes, and blueberries. Leaves should be bright and fresh looking. Choose crisp lettuces that are free of blemishes. A hard-boiled egg or grated cheese is optional. Fresh, delicious blueberries are my topping.

I’m still in love with spring strawberries and today I’m sharing a fruit couscous salad with apples and strawberries, two of my favorite fruits. I’m using organic apples and strawberries with a quick box of couscous. For those you wanting to avoid gluten or wheat, try substituting fluffy brown rice.
