I’m sitting here writing this post on June 1st, a hot, humid day here in Tampa Bay. The predicted high is 93 degrees F but with a heat index that feels like 100 degrees. Summer came early this year right when I was supposed to be enjoying perfect spring days a couple of months ago. Some years we go straight from winter to summer. Really, the calendar I think is based on averages, and there is nothing average about a semi-tropical climate. When summer comes, we’re hot and humid tropical. Even though asparagus is available all year, spring brings the best fresh asparagus. In the U.S., spring crops are harvested from late February through June. Now is the perfect time to pickle asparagus! Pickled asparagus is crunchy, vinegary and a little spicy; it’s great to eat with sandwiches as well as grilled and roasted meats.
