Spinach Strawberry Salad

I do love strawberry season here in Florida. Strawberries are a cool weather crop, and strawberry season usually runs from December through March depending on the weather and temperature. Right now Florida spring strawberries are still in most markets. By late March and early April the US markets switch back to California strawberries. If you live in an area that doesn’t have good fresh strawberries in the local stores yet, pin this recipe for the summer when you can eat fresh local spinach and strawberries.

Cantaloupe Summer Salad

I’ve shared with you my love of fresh salads including last week’s simple cucumbers and tomatoes.  You’ve probably noticed I like to add fruit to my veggies and veggies with my fruit. It’s a win-win.  Today let’s looks at fresh summer cantaloupe and spice it up with tomatoes, black pepper, and onions. This is another great way to use the veggies in your garden.

Artichoke Hearts, Romaine Lettuce & Blueberry Salad

I’m a great salad lover and like to add lots of healthy chewy produce to my salad. I alternate the type of lettuce I use to prevent getting bored.  My favorite is Romaine but I also love baby greens, Boston, Bibb, spinach, and red leaf lettuce.  Today’s salad is mostly Romaine with red leaf lettuce, artichoke hearts, cucumbers, grape tomatoes, and blueberries. Leaves should be bright and fresh looking. Choose crisp lettuces that are free of blemishes. A hard-boiled egg or grated cheese is optional.  Fresh, delicious blueberries are my topping.
