Chicken Piccata
Chicken Piccata is one of my favorite dishes. I was first introduced to it years ago at a restaurant and fell in love. Tender chicken breasts are pounded thin, are dredged in flour and seared until golden. The chicken is then simmered in a butter white wine sauce with fresh lemon and capers. Always remember to zest before squeezing a lemon. Serve this dish over rice or pasta. You’ll impress your family and friends with this easy but seemingly fancy dish. Add a salad and rolls or crusty bread for a great meal.
