30 Minute Kung Pao Chicken

Kung Pao chicken, a classic Chinese takeout dish of stir-fried chicken, peanuts, and vegetables, is easy to make at home. Today’s recipe is spicy chicken with peanuts, similar to what is served in Chinese restaurants. It is easy to make and forgiving. Add a vegetable like broccoli, substitute cashews for peanuts, or bamboo shoots for the water chestnuts. Use half the crushed red pepper for a milder sauce. It’s still a great quick meal.

When I was in college, I was dating a special guy. His birthday was coming up, and I asked him what his favorite meal was. His answer was Beef Stroganoff. Even though classic Russian Stroganoff had been popular in the U.S. since the 1950’s, I had never eaten it much less cooked it. Well, it was long before the days of computers and checking online for recipes. I, of course, went to my favorite place, the library, and found a recipe there. My fellow had a surprise birthday meal of Beef Stroganoff which included the classic ingredients of sour cream, mushrooms, onions, pasta, and steak, and I discovered a new dish I loved.

Chicken, Pasta & Broccoli

Today I’m sharing an easy main dish for hot summer days, Chicken Pasta & Broccoli.  You can use any cooked chicken:  grilled, sauteed, baked, or even a rotisserie chicken from the supermarket.  Cook the pasta in boiling water and add the fresh broccoli for the last 4 minutes. While the pasta is cooking, make your pasta sauce and cut up your cooked chicken. To cut the fat, I am using half & half instead of heavy cream in the sauce. Half-and-half cream combined with melted butter can be a simple substitute in many recipes that require heavy cream. It has about 1/3 of the calories as heavy cream and still makes the dish very tasty.

Roasted Orange Chicken With Peppers

I love all parts of a chicken. Each part has its own great flavor. Do you like chicken legs?  I think they are very tasty and like finding new ways to cook them.  You could use other chicken parts for this recipe: thighs, wings, and breasts.  I know they would taste great with the wonderful sauce of tomato, oranges, onions, and peppers.
