Baked Chicken Schnitzel

Schnitzel is a classic Austrian dish. It is always made from a boneless cut of meat. For weiner schnitzel (which means Viennese Schnitzel) , use boneless veal chops. For pork schnitzel, use boneless pork chops. And for a chicken schnitzel , use boneless skinless chicken breasts.  Classic schnitzel is a breaded meat that is fried. Slow Cooker Chicken Cacciatore

Today’s recipe is an easy dish that brings lots of warmth, flavor, and comfort but with only 15 minutes prep. Italian chicken cacciatore usually uses a mix of chicken parts and is slowly simmered on the stove.  I like a healthy chicken cacciatore slow cooker approach. Making chicken cacciatore in the crock pot achieves the same tenderness and depth of flavor as the slow-simmer method, with less hassle.

Chicken cacciatore resembles a stew that is packed with vegetables, tomato sauce, and lots of yummy seasoning. I like to use skinless bone-in chicken thighs for the flavor and nutrition. You could also use boneless but decrease cook time. If you prefer chicken breasts, it will require more cook time. Use a meat thermometer to determine when the meat is 165 degrees F for a perfect time.  The best part is that despite it’s ease, it is special enough for the main course when entertaining friends. You can serve it over whole grain pasta, brown rice, polenta, cauliflower rice, or even roasted spaghetti squash.  A healthy meal that’s tasty and easy to make. You can’t beat that.

Morocan Roasted Chicken

A friend of mine, Anita, loves to collect recipes and crafts from magazines. She has decades of cut-outs (pre-Pinterest ladies Anita & I are retired.) and recently has been weeding thru them to re-organize the keepers and eliminate those she doesn’t use. She then extended her clean out to her cookbooks.  Since she lives in an apartment, all unwanted cookbooks were deposited on a table at the building entrance for one of her neighbors to take.  I do love the sharing of things like this.  I myself did something similar to this back 10 years ago when I was downsizing.
