In the past, I’ve shared multiple salad recipes with shredded cabbage. I just love cabbage. I’m a fan of any crunchy slaw that comes together fast and balances out a meal. Then I discovered broccoli slaw and fell in love again. Most of the cabbage/broccoli salads used a creamy dressing that contained mayonnaise and few were sweet. My sister’s family is definitely a fan of sweet slaw. Today’s version of healthy coleslaw is vegan, Paleo, and dairy-free.

Creamy Carrot Soup For A Winter Meal
Carrot soup is an easy soup to make on a cold day yet rich enough to be a first course at a holiday meal. There are many variations to carrot soup, but most use chicken stock and some type of milk for a rich creamy flavor. Today’s recipe adds fresh ginger for a little zing in the taste. I like a tablespoon of Greek yogurt on top of my bowl of soup but that is optional. My brother-in-law likes a touch of spicy like a teaspoon of Harissa relish on top of the yogurt. (Harissa is a Moroccan condiment based on tomatoes and chili for medium heat.)

If you like crispy pickles in the summer, then you are going to love this new take on an old classic. Pickled carrots are absolutely delicious and lend a burst of color to any plate. Because these pickled carrots are refrigerator pickles, they are much simpler to prepare than when using traditional canning, and allow the carrots to maintain just the right amount of crunch.

Easy Baked Lemon Chicken
I’m all about easy, delicious food. I discovered pan roasting a few years ago and haven’t looked back. This tasty lemon chicken with vegetables is all cooked together in a baking sheet with sides. One pan to clean but lots of good food to eat. Use a whole chicken cut into pieces or just your favorite parts. If you want an economical meal, use thighs with as much fat removed as possible. Tasty!
