Easy Arugula & Fig Salad

For everyone in the USA, I must first say HAPPY LABOR DAY! I hope you are enjoying the day with family and friends.

Now we’ll get to a new recipe. Fresh figs are typically in season from July through October. Pick figs that are ripe. The skin is full of color. The fruit is soft, but not mushy. Today’s easy fig salad recipe is very verstile, Arugula & Fig Salad.

This is such an easy yet elegant salad. Start with arugula, add fresh figs, grated parmesan cheese, and pine nuts. Mix honey and balsamic vinegar to drizzle over the salad. The spiciness of the argula paired with the sweetness of the figs and honey is wonderful, and the balsamic flavor ties it all nicely together!

Arugula & Fig Salad

This salad with fresh figs and arugula is simple and so delicious!

Ingredients

  • 4 cups arugula
  • 8 fresh figs, quartered
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp toasted pine nuts
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • salt & pepper to taste

Instructions

  • Toss arugula, figs, Parmesan cheese, & pine nuts together in a large bowl
  • In small bowl, add honey, balsamic vinegar, and salt & pepper
  • Whisk together dressing
  • Drizzle dressing over salad and toss
  • Serve immediately

    Figs are something I never eat, not because I don’t like them but because I just don’t think of them.
    This looks and sounds so good and I learned the other week that over here in the UK we call Arugula Rocket.
