Summer Veggie Sandwich

Summer is the perfect time to enjoy all your favorite garden flavors. As we near the end of August, the farmer’s market still has loads of fresh vegetables. Today I’m celebrating with a vegetable sandwich stuffed with cucumbers, sprouts, tomatoes, and avocadoes.

Start with a great crusty bread like a sourdough, a whole grain, or sprouted grain. Like rye bread? Gve it a try. If you need gluten-free, always stick with what is healthy for you. I try different breads at different times. Want it toasted? With some soft bread slices you might need to toast first. You can make a sub sandwich for 2 by doubling ingredients and using one of these breads:

Hoagie/Sub Rolls: These are long, cylindrical loaves with a soft interior and a thin crust, designed to be sliced lengthwise and packed with ingredients. 

Baguettes: A French bread with a crispy exterior and a soft, chewy interior. 

Ciabatta: An Italian bread known for its airy, open crumb, crispy crust, and ability to capture sauces.

Next spread cream cheese on each slice. If you’re dairy-free, you can use a plant-based cream cheese. Another option is to spread a herbed cream cheese dip. Now you add layers of goodies such as sprouts, lettuce, tomatoes, avocado, sliced pepperoncini, onion, and cucumber with a red wine vinaigrette. The wine vinaigrette and spicy pepperoncini take the vegetables to another level. You could also use your favorite vinegar like balsamic. Note: For those who are unfamiliar with pepperoncini, it’s a mild, tangy yellow pepper with a little zing sold in jars near the pickle section. .

Summer Vegetable Sandwich

This is a great summertime sandwich for lunch. It's filled with fresh vegetables.

Ingredients

  • 2 thick slices crusty whole wheat bread or bread of choice
  • 2 tbsp cream cheese, softened
  • 6 slices cucumber
  • 2 tbsp alfalfa sprouts
  • 1 tsp olive oil
  • 1 tsp red wine vinegar or vinegar of choice
  • 1 tsp lemon juice
  • 1 slice tomato
  • 1 leaf lettuce
  • 1 oz sliced pepperoncini
  • 1/2 Haas avocado
  • 1 slice red onion
  • salt and pepper to taste

Instructions

  • Toast bread, optional
  • Mix vinegar, olive oil, salt & pepper in small bowl
  • Add sliced cucumbers to bowl & toss to coat
  • Mash avocado, add lemon juice, & salt and pepper
  • Spread each slice of bread with 1 tablespoon cream cheese
  • On one slice of bread, arrange cucumber slices in a single layer
  • Top with sprouts, onion, tomato, lettuce, and pepperoncini
  • On other slice of bread spread mashed avocado
  • Close sandwich and serve immediately

  1. mm what delicious fillings but I’ve never heard of pepperoncini, I will see if I can get some. My favourite bread is Soda bread, but I like all sorts of bread.

  2. We prefer Ciabatta. And eat this often. It’s good on hot summer days. We don’t like to cook 😄
