This easy cream of asparagus soup is perfect for making the most of fresh asparagus when it’s in season. It’s full of spring flavor and makes a perfect appetizer or even main course. If you’re longing for Spring, and asparagus shows up in your local stores, add this recipe to your favorite asparagus dishes.

Cream of Asparagus Soup
Use organic when available. Serves 4
Cream of Asparagus Soup
Ingredients
- 1 lb fresh asparagus, trimmed & cut into 1-inch pieces
- 15 oz homemade or purchased carton of chicken broth (or vegetable broth to keep it vegetarian)
- 1/2 cup divided chopped onion
- 2 tbsp butter or margarine
- 2 tbsp flour
- salt and pepper to taste
- 1 cup milk
- 1/2 cup Greek yogurt (or low fat sour cream)
- 1 tsp fresh lemon juice
- optional garnish of chopped cooked spears, parmesan cheese, fresh herbs like basil, cilantro, or rosemary, and croutons
Instructions
- Combine asparagus, 1/2 cup chicken or vegetable broth, & onion in a large saucepan
- Cover & bring to a boil over high heat
- Reduce heat to medium-low & simmer, uncovered, until asparagus is tender, about 12 minutes
- Remove from heat and cool for about 5 minutes
- Transfer mixture to a blender or use an immersion blender
- Puree until smooth and set aside
- In the same saucepan, melt butter over medium-low heat
- Make a roux by stirring in flour, salt, and pepper
- Cook, stirring constantly, for 2 minutes
- Increase heat to medium
- Add remaining chicken broth, stirring constantly, until the mixture boils
- Stir in pureed asparagus and milk
- Place Greek yogurt in a small bowl & stir in a 1/2 cup of hot soup until blended
- Pour yogurt mix into soup and stir
- Add lemon juice and stir
- Garnish as desired like a few chopped cooked asparagus spears, fresh herbs like basil, rosemary, or cilantro, croutons, a sprinkling of parmesan cheese, or a spoonful of Greek yogurt
- Serve with crusty bread as an appetizer. For a vegetarian main entree serve with cheese toast or eggs and toast
