Asparagus is available year-round, but spring is the best season for this nutritious vegetable. Crops are harvested from late February to June, with April being the prime month and high season for asparagus. Today I’m sharing an easy dinner idea of teriyaki chicken with steamed fresh asparagus. Marinate the boneless, skinless chicken breasts for an hour. Then cook the chicken, and dinner is on the table in 45 minutes. It’s an easy recipe that’s nice enough for company.

Teriyaki Chicken and Asparagus
Use organic when available. Makes 4 servings.
Teriyaki Chicken and Asparagus
Ingredients
- 3/4 cup honey teriyaki sauce
- 1/4 cup white wine
- 4 skinless, boneless chicken breast halves
- 16 spears fresh asparagus
- 4 slices Swiss cheese
Instructions
- In a large bowl, mix the honey teriyaki sauce and wine
- Place chicken in the bowl, and coat with the marinade
- Cover & marinate in refrigerator at least 1 hour (or overnight)
- Preheat oven to 375 degrees F (190 degrees C)
- Discard marinade and arrange chicken breasts in a baking dish
- Bake 15 minutes in oven, until almost done
- Place asparagus in a pot fitted with a steamer basket over 1 inch of boiling water & steam 5 minutes, until tender
- Remove pan from oven, place 4 asparagus spears on each chicken breast, & top each breast with a slice of Swiss cheese
- Return pan to oven, & continue baking 10 minutes, or until cheese is melted and chicken juices run clear

This looks wonderful. Costco has bags of organic asparagus most of the year making it easy to get all the time.
I love asparagus but haven’t seen any yet this year. Can you also buy white asparagus in the US?

There may be stores that sell white but it’s not something I see in mine. I love when all the tender asparagus hits the shelves and on sale too.
