Today’s recipe is a great, easy dish anytime of the year. It’s a comforting winter dish, and it’s also a great comfort for those with a cold or flu. The quality of the soup depends on the quality of the stock or broth you use making the soup. If you’ve tried my crock pot chicken stock recipe, I would use that. Otherwise, buy the best quality stock you can find. Your spices can be adjusted to individual taste.
Homemade chicken noodle soup is healthy. It’s much healthier than store-bought soups which are usually loaded with sodium, artificial flavors, MSG, and preservatives. Chicken broth or stock (especially when homemade) are loaded with vitamins and minerals, which is soothing for the body. It’s still healthier if you buy your favorite cartoon of stock. The bones from a rotisserie chicken are perfect to make stock. Add the meat from the rotisserie chicken to the broth with egg noodles. Egg noodles are the classic addition to chicken soup, but you can use any noodle you prefer.

Homemade Chicken Noodle Soup
Use organic when available. Serves 8
Homemade Chicken Noodle Soup
Ingredients
- 1 tbsp butter
- 2 tbsp olive oil
- 3 large carrots diced
- 1/2 cup diced onion
- 2 ribs diced celery
- 1 clove garlic minced
- 1/4 tsp fresh thyme leaves or 1/8 tsp dried thyme
- 1/8 tsp red pepper
- 1/8 tsp dried rosemary
- 10 cups chicken broth or stock
- 4 oz uncooked wide egg noodles
- 1 tsp Better than bouillon chicken flavor
- 2 cooked boneless chicken breast halves cubed
- salt and ground black pepper to taste
Instructions
- Melt butter in a large soup pot over medium heat
- Stir in carrot, onion, celery, thyme, garlic, rosemary, and salt
- Add oil
- Cook and stir until onions turn soft and translucent, 5 to 6 minutes
- Stir in chicken broth and bring to a boil
- Stir in egg noodles; cook until tender, about 5 minutes
- Season with Better than bouillon chicken flavor, red pepper, salt if necessary, and black pepper
- Add cooked chicken breast meat
- Simmer until heated through, about 5 minutes
- Serve hot with crackers or crusty bread
