Pecan Stuffed Medjool Dates

Dates are a healthy snack or dessert idea and stuffed with peanut butter are delicious on the go snacks for kids and adults. Because of their natural sweetness, dates are known as “nature’s candies.” Medjool dates are ideal for this recipe because of their size and plumpness. You can use creamy or crunchy peanut butter, or another butter like almond butter. They are made of only 3 ingredients: dates, peanut butter (or other nut/seed butter), and pecans. They are impressive to serve at a get-together but are extrememly easy to make.

Make a slit lengthwise on one side of the Medjool Dates with a sharp knife to expose the pit and remove it. Be careful not to slice the Medjool dates all the way through. Using a teaspoon or a piping bag, fill each date with peanut butter. Add a nut on top and refrigerate. Use any nut butter you like and use any nuts you want. This recipe is so quick and easy. If you need nut-free snacks, try a seed butter like tahini or sunflower seed. Then skip the pecan addition.

Pecan Stuffed Dates

Ingredients

  • 6 Medjool dates
  • 1/4 cup peanut or other nut butter, creamy or crunchy
  • 6 nut halves like pecans or 1 tablespoon of chopped nuts for garnish
  • pinch of salt optional

Instructions

  • Make a slit lengthwise on one side of the Medjool Dates with a sharp knife to expose the pit and remove it
  • Be careful not to slice dates all the way through
  • Using a teaspoon or a piping bag, fill each date with nut or seed butter
  • Place pecan on top of peanut butter or drop chopped nuts of your choice
  • Place in refrigerator to chill for 1 hour
  • Variations and Options: sprinkle with desiccated coconut, grated dark chocolate or some melted chocolate
