Today’s easy-to-make recipe that’s sure to become a family favorite is Slow Cooker Chicken Tortilla Soup. It’s a comforting blend of tender chicken, savory spices, and a medley of veggies, all simmered to perfection in your trusty slow cooker. I’m trying to eat healthier and am using low-sodium chicken broth and boneless skinless chicken breast. You could use boneless skinless chicken thighs too. This soup is great year-round, but it’s really comforting when the temperature lowers. I’m using my homemade taco seasoning which saves me money and time. I love adding avocado and Greek yogurt as my optional toppings.
Slow Cooker Tortilla Soup
Use organic when available. Serves 6
Slow Cooker Chicken Tortilla Soup
Ingredients
- 1 1/2 lb boneless skinless chicken breasts (3), or thighs
- 1 medium onion chopped
- 1 red bell pepper, seeded & chopped
- 1 yellow bell pepper, seeded & chopped
- 1 can black beans, drained
- 1 cup fresh or frozen defrosted corn kernels
- 1 can fire roasted tomatoes
- 4 oz tomato paste
- 3 cups low sodium chicken stock or broth
- 7 tsp taco seasoning
- 4 1/2 oz can of diced green chilies drained
- 1 cup shredded cheese
- juice of 1 lime
- 3.5 oz bag tortilla strips
- Optional topping: fresh cilantro chopped
- Optional topping: avocado diced
- Optional topping: Greek yogurt or sour cream
Instructions
- Place chicken in 6 qt crock pot
- Sprinkle salt, pepper, & taco seasoning over chicken
- Add onion, black beans, corn, tomatoes, bell peppers, chilies, and tomato paste,
- Add chicken stock & stir
- Put lid on slow cooker and set on high for 4 to 5 hours
- Use fork to shred chicken
- Add lime juice, stir, & serve
- Top with shredded cheese, tortilla strips, and fresh cilantro
- Add any optional toppings desired
- Serve with tortilla chips, crackers, or corn bread and a salad

When I used to eat chicken, I loved this type of soup and did find it a comfort type soup. Now as a vegetarian, I make a vegan version of tortilla soup. Yours looks delicious and such a great idea to use the slow cooker.
