For a fast summer side, this grilled zucchini recipe that includes a touch of balsamic vinegar, garlic, and Italian seasoning is perfect. It cooks simply on the grill in a matter of minutes. It’s lower in calories but ridiculously delicious.


Balsamic Grilled Zucchini
Use organic when available. Serves 4
Balsamic Grilled Zucchini
Ingredients
- 2 nice-size zucchini quartered lengthwise
- 2 tsp olive oil
- 1 tsp Italian seasoning
- 2 tbsp balsamic vinegar
- 1/2 tsp garlic powder
- 1 pinch salt
Instructions
- Preheat an outdoor grill for medium-low heat
- Oil the grate
- Brush zucchini with olive oil
- Mix salt, Italian herbs, and garlic powder together
- Sprinkle seasoning on zucchini
- Place zucchini on grill
- Cook until beginning to brown, 3 to 4 minutes per side
- Brush balsamic vinegar over zucchini
- Cook for 1 minute more
- Serve warm

That sounds delicious! Grilled zucchini is the perfect summer side dish.
This sounds good! My youngest son was once in an inter-school Spelling Bee. He was doing really well and was well on course to win, but was then asked how to spell zucchini. As the son of British parents, he had no idea what it was and got it wrong. If they had asked him to spell courgette, he would probably have won!
Being an American, I would have to look up the spelling of courgette (I copied your word).
