Grilled Pineapple Salsa

Pineapple salsa is a fabulous salsa to go with summer grilling. It’s an easy crowd pleaser. This recipe is sweet, colorful, and versatile. Serve it with grilled chicken, seafood, beef, or pork.

Grill pineapple slices for about 3 to 5 minutes on each side. Carmelized pineapple makes a difference you don’t want to miss. Cool, chop, and mix with other ingredients. Really sweet pineapples do not need sweetener. Taste your pineapple to decide if sweetener is needed. It’s wonderful on tacos and as a dip. Try it with my easy grilled chicken tacos.

Grilled Pineapple Salsa

This versatile grilled pineapple salsa is really all you need to top off all your grilled meals this summer.

Ingredients

  • 1/2 fresh pineapple – peeled, cored, and sliced in 1/2 inch slices
  • 2 tsp olive oil or cooking spray
  • 1 red bell pepper, finely chopped
  • 1 small sweet onion, chopped
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeno pepper, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp fresh lime juice
  • optional 1 tsp honey or white sugar
  • salt & ground black pepper to taste

Instructions

  • Preheat grill for medium heat and lightly oil the grate
  • Brush pineapple slices with olive oil or spray with food spray
  • Cook pineapple on the grill until lightly browned and caramelized, each side 2 to 5 minutes.
  • Remove pineapple from grill and cool
  • Chop into small pieces
  • Mix pineapple, red bell pepper, onion, cilantro, jalapeno pepper, garlic, lime juice, honey (if using), salt, and ground black pepper together in a bowl
  • Refrigerate until chilled and flavors blend for at least an hour.
  • Serve with seafood, chicken, pork, beef or chips
