Pasta Cobb Salad

This time of year, I’m always looking for refreshing recipes to keep the kitchen cool. Pasta Cobb Salad does just that. It also is great to take it to summer cookouts, tailgates, and BBQs. Cobb Salad is one my favorite meals. If I spot it on a restaurant menu, I have a hard time passing it up. Starring chicken, avocado, bacon, blue cheese, lettuce, tomato, and hard-boiled eggs, this main dish salad makes me happy. Pasta Cobb Salad is a delightful twist on the classic Cobb salad. Incorporating pasta into the salad give you an extra dose of hearty comfort and satisfaction. It’s the perfect meal as the weather warms up and it only takes 30 minutes to make.

The chicken can be a supermarket rotesserie chicken, leftover cooked chicken, or warm grilled chicken breast. It’s your choice. Red wine vinaigrette is the traditional Cobb salad dressing, but you could also use any other light vinaigrette or opt for a creamier alternative like ranch or Blue cheese. I personally like offering several popular dressings and let each diner choose their favorite. See the recipe for traditional Cobb Salad for the red wine vinaigrette recipe. I prefer romaine but if you only have iceberg or baby lettuce, feel free to substitute. Part of the traditional Cobb is sections or rows of ingredients on top of a bed of lettuce. You can always adjust the ingredients to fit your inventory or likes. Things you can include in this salad are red or green onions, grilled corn, ham, other cheeses, or chives.

Pasta Cobb Salad

Pasta Cobb Salad is a delicious take on an American garden salad thats loaded with pasta, chicken, bacon, avocado, tomatoes, lettuce, & blue cheese.

Ingredients

  • 1/2 cup dried pasta
  • 1 head of romaine lettuce chopped
  • 3 hard boiled eggs, peeled and quartered
  • 12 oz cooked chicken breast chopped
  • 6 slices cooked bacon, crumbled
  • 1 avocado thinly sliced
  • 4 oz crumbled blue cheese
  • 5 oz cherrry tomatoes halved
  • red wine vinaigrette or dressing of choice

Instructions

  • Cook pasta according to package directions till al dente
  • Drain, rinse with cold water to keep the pasta from sticking together and set aside
  • Place lettuce in large bowl or on large platter
  • Add all ingredients on top of lettuce in sections or rows: pasta, bacon, eggs, chicken, cherry tomatoes, avocado, cucumber and blue cheese
  • Serve with red vinaigrette or salad dressing of choice like ranch or blue cheese
  • Serve crusty bread to accompany the salad

  1. We are having Cobb Salad this week, a Middle Eastern-Style one. I’d never heard of Cobb Salad until I ordered the recipe box for the week.
    This looks and sounds so good.

  2. That looks amazing, I’ve never heard of a cobb salad. I love the addition of pasta to salad but I’m afraid I’m not a fan of bacon. The rest of my family are though and I’m pretty sure they’d like all of these ingredients so I may have to give it a go.
