It’s May, and I’m ready to grill chicken. Last October I shared a recipe for Crunchy Apple Salsa with its sweet heat. It is a perfect addition to grilled meat. Today I’d like to discuss a great marinated grilled chicken. The marinade is a mixture of white wine, apple juice, lime zest, and black pepper. Together the salsa topped grilled chicken breasts make a wonderful and easy main course.

Grilled Marinated Chicken
Use organic when available. Serves 4
Grilled Marinated Chicken
Ingredients
- 1/4 cup white wine
- 1/4 cup apple juice
- 1/2 tsp grated lime peel
- 1/2 tsp salt
- dash pepper
- 4 medium boneless, skinless chicken breasts or thighs
Instructions
- Gather all marinade ingredients in bowl and whisk
- Place chicken in covered dish or resealable plastic bag
- Optional: If you wish to use some of marinade as a sauce, reserve some marinade and set aside. NEVER use marinade that touched raw meat as a sauce.
- Pour marinade over chicken
- Coat chicken and place in refrigerator for at least 30 minutes
- Preheat grill for medium-low heat and lightly oil the grate
- Drain and discard marinade
- Grill chicken until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C)
- Serve topped with Apple Salsa

I scrolled to get the salsa recipe which I’d missed — that is a great idea with this recipe or so many others like you said in that post. Thanks for providing that link. I will use that. (I have a recipe that combines quartered apples with onions and some spices sauteed together and then put under a pork tenderloin to roast — it is a delicious combination, so I wasn’t surprised at combining apples with savory ingredients.
