Many families will be celebrating Easter on 3/31/24 with a ham dinner. That is one of my favorite childhood memories with my mother’s baked ham on the lace tablecloth with her good china and silverware. Now the fun question is what will you do with leftover ham? Leftover ham can be transformed into lots of delicious dishes. In December I shared the New Year dish, Slow Cooker Black-Eyed Peas With Greens & Ham. A year round popular option for me is Easter Bean & Ham Bone Soup, where succulent ham pieces add a savory depth to the hearty broth. Cheesy Ham & Asparagus Casserole is perfect for spring asparagus.
Today I liked to share a must-make recipe, Easy Ham Quiche. This is a convenient and flavorful way to repurpose leftover ham, vegetables, and cheese for dinner or breakfast. It’s also a basic recipe for crustless quiche that can be adapted to what ever left overs you have. I add baking mix to make the eggs thick. AllRecipes has great recipe for homemade Bisquick.
Don’t like ham? Try adding bacon or meat. For any vegtarians, use mushrooms and veggies of choice. Try green peppers, spinach, mushrooms, or whatever is in season. You can try different cheeses too. Try asparagus and ricotta. Combine cooked pork sausage, cheddar cheese, cumin, and jalapeno peppers for a bold flavor.
If you are using a pie plate, I would use 2 pans as this recipe makes a lot. You can use any glass or ceramic baking dish that is deep.
Easy Ham Quiche (crustless)
Use organic when available. Serves 8
Easy Ham Quiche (crustless)
Ingredients
- 2 cups milk
- 4 large eggs
- 1 cup grated Parmesan cheese
- 3/4 cup biscuit baking mix
- 1/4 cup butter, softened
- 1 10 ounce package chopped frozen broccoli, thawed and drained
- 8 oz shredded Cheddar cheese
- 1 cup cubed cooked ham
Instructions
- Preheat the oven to 375 degrees F (190 degrees C)
- Lightly grease a 10-inch quiche dish
- Beat milk, eggs, Parmesan cheese, baking mix, & butter in a large bowl until well combined
- Stir in broccoli, Cheddar cheese, and ham
- Pour into prepared pan
- Bake in oven until eggs are set & top is golden brown, about 45 minutes,

Leftover ham never lasts long here. This quiche looks so good. I always make one’s with crusts, I should try one without them. They are great for using up leftovers.
