If you have leftover ham from a holiday dinner, today’s recipe, Cheesy Ham & Asparagus Casserole, is just for you. This casserole has ham, onion, eggs, red bell peppers, asparagus, and lots of cheese. Most of the ingredients you may already have on hand. It is a wonderfully easy quiche-like casserole to throw together for dinner or breakfast. You can even prepare the ingredients in the dish, cover it, and put in the refrigerator overnight. I would increase baking time from 25 to 35 minutes due to the cold ingredients. If the cheese starts to brown too quickly, cover dish with aluminum foil to finish cooking.
You can adjust ingredients according to family taste or your pantry contents. Don’t have ham? Try it with sausage. I’d use my Healthy Chicken Breakfast Sausage. I like to try making my dishes a little healthier without losing flavor. You could even use two kinds of meat for a really hearty meal. If you have no asparagus or don’t like it, try broccoli instead. Both vegetables should be blanched for a couple minutes before using. Drain and pat dry. If you want to use frozen asparagus or broccoli, let it defrost and then lightly press to reduce the water content. For a large brunch, double the ingredients for 12 servings.
Cheesy Ham & Asparagus Casserole
Use organic when available. Serves 6.
Cheesy Ham & Asparagus Casserole
Ingredients
- 4 large free-range eggs
- 3/4 cup chopped cooked ham
- 6 oz fresh chopped asparagus blanched and drained
- 1/4 cup chopped onions
- 1/4 cup chopped red bell pepper
- 1 tbsp olive oil
- 1 cup milk, regular or low fat
- 1/4 cup grated Parmesan cheese
- 1/2 cup flour
- 1/2 tsp dried tarragon
- 3/4 cup shredded Cheddar cheese
- salt and pepper to taste
Instructions
- Preheat oven to 425 degrees F (220 degrees C)
- Lightly grease a baking dish
- Put olive oil in saute pan & add onion
- Cook for 1 minute and add red pepper
- Remove from heat & add ham and asparagus
- Mix ham, onion, red bell peppers, & asparagus
- Place ham mix in prepared baking dish
- In a large bowl, beat together the eggs, milk, flour, Parmesan, tarragon, 1/4 cup Cheddar cheese, salt, and pepper
- Pour over the ham mixture
- Bake 20 minutes in oven, or until a knife inserted in the center comes out clean
- Sprinkle top with Cheddar cheese
- Cook for another 5 minutes or until cheese melts on top
- Let stand 10 minutes to cool prior to serving
- Suggestions to complete meal: rolls or bread, fresh fruit

Happy New Year, Carol! This casserole is very similar to a VERY simple one I make that is simply eggs, ham chunks, and shredded cheddar cheese. My hubby is a picky eater, so I can’t add all the delicious veggies, but this simple version is still very good. I make it quite often, as it’s so quick to heat up a portion whenever you want a good breakfast but don’t want to have to MAKE one every day! I found you on the Wonderful Wednesday Blog Hop.
