I’m always looking for recipes for them. Today’s recipe is a naturally sweet side dish that is perfect for holiday meals and makes every meal special. If you have family members who don’t like many of the popular sweet recipes for sweet potatoes, give this savory sweet dish a try. Sweet potatoes are roasted to perfection with chunky onion wedges and garlic, then finished with a drizzle of balsamic vinegar for a tasty, easy dish.
These roasted sweet potatoes are the perfect accompaniment to all sorts of main dishes. For a mini Thanksgiving dinner any day of the year, try serving them with Slow Cooker Turkey Breast. You could also pair them with brown rice and Brussels sprouts to make a seasonal vegetable bowl.
Roasted Sweet Potato With Onion
Use organic when available. Serves 4
Roasted Sweet Potato With Onion
Ingredients
- 4 cups peeled, chopped sweet potatoes
- 1 sweet onion (such as Vidalia) cut into wedges
- 2 cloves of thinly sliced fresh garlic
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and black pepper to taste
Instructions
- Preheat the oven to 425 degrees F (220 degrees C)
- Mix sweet potatoes, onion, and garlic in a bowl
- Drizzle olive oil over the mixture and toss to coat
- Pour into a shallow roasting pan
- Roast sweet potato mixture in oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes
- Remove from the oven
- Drizzle balsamic vinegar over the vegetables
- Salt & pepper to taste

Dear Carol, I love sweet potatoes too! And I like them best with spicy ingredients like onions, garlic, chili, etc. I haven’t combined them with balsamic vinegar yet and I’ve mainly made them in the pan, not in the oven. Your recipe sounds very interesting to me!
