Raw Corn Salad for Hot Summer Days

In a few weeks we’ll celebrate the 4th of July here in the USA. Then we have the hot months of July and August. Today’s raw corn salad is quick, wholesome, and perfect for summer. No cooking required. We’re using fresh, raw, sweet corn on the cob, tomato, onion, and fresh herbs in a vinaigrette. I love cucumber, and you can add sliced cucumber, peppers, or avocado to tailor to your taste. Feel free to adjust ingredients to please your family. (If you don’t like raw corn kernels, steam or grill the corn first.) If you want to make this next winter, I would suggest frozen corn not canned for better flavor. The rest of the ingredients I’d still want fresh vegetables and herbs.

Fresh Raw Summer Corn Salad

Chilled raw corn salad is perfect for hot summer days. No cooking is required and fresh vegetables and herbs guarantee great flavor.

Ingredients

  • 3 ears fresh corn kernels cut from cob
  • 1 pint cherry tomatoes or 2 1/2 cups chopped tomatoes
  • 1 small sweet red onion chopped
  • 1/4 cup chopped fresh cilantro or basil
  • 2 tbsp extra virgin olive oil
  • 1 lime juiced
  • salt and black pepper to taste
  • 1 optional cucumber peeled and sliced
  • 1 optional chopped pepper or avocado

Instructions

  • In large bowl mix corn kernels, tomatoes, onion, cilantro, and red onion together in a large bowl (plus optionals desired)
  • In small bowl or jar mix oil and lime juice or use your favorite vinaigrette
  • Drizzle dressing over salad
  • Season with salt and pepper and toss to coat vegetables
  • I like to refrigerate the salad for 20 minutes to mix flavors and chill (optional)
  • Garnish with fresh herbs
