Slow Cooker BBQ Chicken

I love easy slow cooker recipes. Today’s recipe is BBQ chicken in the crock pot. I’m using boneless, skinless chicken breasts, but it would work well with boneless, skinless thighs or chicken parts with bones. It takes minutes to put it on to cook. Return home from work and it’s waiting for you. It’s great on rolls and buns for a shredded chicken sandwich, but I like to experiment.

My favorite way to eat it is on brown rice with vegetables.

Another option is served on a baked potato or over mashed potatoes.

If you are cutting carbs, I would suggest serving the chicken with a green salad or even in a lettuce wrap. If you like veggie spirals, add them to the crock pot for a few minutes at the end of cooking. Serve warm with chicken.

Ingredients

  • 4 large skinless, boneless chicken breast halves or about 2 lbs chicken
  • 1 cup ketchup
  • 2 tbsp mustard
  • 2 tsp lemon juice
  • 1/4 tsp garlic powder
  • 1/4 cup maple syrup
  • 2 tbsp  Worcestershire sauce
  • 2 tsp chili powder
  • 1/8 tsp cayenne pepper
  • 2 dashes hot pepper sauce, or to taste
  • 8 sandwich rolls
  • 1/4 cup optional liquid smoke

Instructions

  • Place chicken in bottom of crock pot
  • In a bowl add all the other ingredients except rolls
  • Stir well until blended
  • Pour sauce over meat
  • Set slow cooker to low, and cook for 6 hours
  • Shred chicken with a fork
  • Cook for 30 more minutes
  • Serve on buns or sandwich rolls

  1. I never, ever use my slow cooker.It’s so old, I don’t even know if it has speeds. But this looks terrific and I might just have to try it. Rick would love it too. Consider this one saved!

    1. If your old one doesn’t work, check out the sales on Amazon and Walmart for a new one. I got mine about 9 years ago at a Winn Dixie store on sale. They really are handy, and I like that when I leave home my food won’t burn.

  2. Hi Carol. I agree, a slow cooked chicken breast is one of the best. Did you ever try a slow cooked chicken curry with natural ingredients? Yummy.

    1. I’m so happy you like it. I used to go to a mall restaurant where everything went on a baked potato. I cried when it closed.
