This quick and easy recipe is well- balanced with protein, fresh tomatoes, and broccoli. For ease I used a store-bought marinara sauce, any flavor you like. Then I added Italian chicken sausage, Italian seasoning, red pepper flakes, fresh crushed garlic, basil and broccoli. Italian sausage with broccoli in a spicy tomato sauce is perfect on spaghetti pasta but you can use your favorite shape.
This is a flexible recipe and you can use very ripe tomatoes or other vegetables that you need to use up, such as bell peppers, spinach, mushrooms, kale, or arugula. If sauce thickens too much, add 1/2 cup of red wine or chicken stock.
Spicy Sausage & Pasta With Broccoli
Use organic when available. Serves 4
Spicy Sausage & Pasta With Broccoli
Ingredients
- 2 tbsp olive oil
- 15 oz spicy or mild Italian chicken sausages sliced or casings removed & meat crumbled
- 1/4 tsp red pepper flakes or to taste
- 1 tsp Italian seasoning
- 13 oz marinara sauce
- 4 medium tomatoes chopped
- 2 crushed garlic cloves
- salt and pepper to taste
- 12 oz spaghetti pasta
- 1/2 oz fresh basil
- 1 cup fresh or frozen broccoli florets or spinach
- 1/2 cup optional red wine or chicken stock if sauce is too thick
- 1/3 cup grated Parmesan cheese or skip for dairy-free meal
Instructions
- Bring a pot of water to a boil & cook spaghetti according to package directions
- If using frozen broccoli, defrost and drain any liquid
- Place oil & sausages in large non-stick sauce pan over medium heat
- Cook for about 3 to 5 minutes until browned on each side
- Drain excess fat
- Add crushed garlic, Italian seasoning, red pepper flakes, marinara sauce (or tomato sauce) and broccoli to pan
- Bring to a boil & stir well
- Cover and cook on medium for about 7 to 8 minutes
- Add chopped fresh tomatoes & basil and cook for about 2 more minutes
- Add cooked and drained pasta to the sauce
- Lower heat and stir as pasta reheats
- Adjust salt & pepper to taste: if there was enough salt in the sausage, you may not need to add more
- If sauce is too thick, you can add optional red wine or chicken stock & cook on medium for 5 minutes
- Separate portions on each plate & top with grated cheese and fresh basil; skip cheese for dairy-free meal
- Serve with green salad and crusty bread

We love sausage pasta, it’s such a quick and filling meal to make and my family love it. I hadn’t thought of adding broccoli before though.
That sounds very good, dear Carol. I don’t know where I can get the spicy Italian sausage, but that doesn’t matter – we also have good spicy sausage in Austria, which I’m sure works just as well. (Recently we changed a recipe of a chickpea chorizo stew so that we used an Austrian hot sausage instead of the Spanish chorizo ;-D – that tasted delicious too.)
