Mexican Casserole, One Dish Meal

Today’s recipe is another easy and tasty one dish meal but with a Mexican flavor. I’m using lean ground beef, 93% fat free, but you could also use ground turkey. Start with a bed of crushed tortilla chips and then add sauteed ground beef with salsa, taco seasoning, and chili beans. Spread low-fat sour cream over the beef and bean layer. Sprinkle the fresh tomatoes, green onions, and black olives over the sour cream and top with grated Cheddar cheese. Bake until it’s hot and bubbly for a great dinner. I’d serve it with a green salad. I always look for lower fat sour cream and cheese as it’s better for you but still gives you great flavor. Regular sour cream is fairly high in fat and calories. Reduced fat sour cream has a similar nutrient profile and a pleasant taste but with fewer calories and about 38% less fat. I don’t recommend fat free sour cream as they add fillers to give it a creamy texture.

This is another recipe that uses taco seasoning. Check out my post for homemade taco seasoning mix and save money. A one ounce package of seasoning mix contains 1/8 cup of seasoning. My seasoning recipe makes 8 teaspoons of seasoning and only 6 teaspoons are used for the casserole. I personally would double my taco mix of spices to keep in a bottle to use often.

Mexican Casserole

An easy one dish meal for dinner with a Mexican inspired taste.

Ingredients

  • 1 lb lean ground beef or ground turkey
  • 2 cups salsa
  • 1/8 cup taco seasoning or 6 tsp or 1 oz envelope
  • 16 oz can of chili beans, drained
  • 3 cups tortilla chips crushed
  • 2 cups low-fat sour cream
  • 2 oz can of sliced black olives drained
  • 1/2 cup sliced green onions
  • 1/2 cup chopped fresh tomatoes
  • 1/2 cup shredded reduced-fat Cheddar cheese or cheese of choice

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C)
  • Spray a 9×13-baking dish with cooking spray
  • Heat a large skillet over medium-high heat
  • Cook ground beef until browned and crumbly, 8 to 10 minutes
  • Pour off any melted fat
  • Add taco seasoning and stir well
  • Stir in salsa, reduce heat, & simmer until liquid is absorbed about 20 minutes
  • Stir in beans
  • Cook until heated through
  • Spread crushed tortilla chips on bottom of baking dish
  • Cover chips with beef mixture
  • Spread sour cream over beef
  • Sprinkle onions, olives, and tomatoes over beef
  • Top with shredded cheese
  • Bake for 30 minutes until hot and bubbly
  • Serve with fresh green salad and tortilla chips
