Sheet Pan Mediterranean Chicken With Veggies

It’s winter, and you need a comforting meal for the family. Today’s recipe is so simple to make, and it’s also such a flavorful meal with easy clean-up. This all in one chicken dinner will provide roasted chicken thighs with your favorite vegetables cooked in a tasty marinade.

Sheet Pan Mediterranean Chicken Dinner

This easy sheet pan meal of roasted marinated chicken with vegetables is perfect for a week night meal with easy clean-up.

Ingredients

  • 4 chicken thighs with skin or chicken part of choice
  • 1/4 cup virgin olive oil
  • 1 lemon, juiced
  • 1 lemon, sliced
  • 2 tbsp balsamic vinegar
  • 1 tsp dried tarragon
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 small red onion, sliced small sections
  • 8 mini bell peppers cut into strips
  • 1 lb baby potatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 8 pitted kalamata olives or capers/artichoke hearts

Instructions

  • Preheat the oven to 425 degrees F (220 degrees C)
  • Line a large rimmed baking sheet with aluminum foil
  • Whisk olive oil, juice of 1 lemon, vinegar, tarragon, oregano, paprika, salt, and pepper together in a large bowl
  •  Add chicken thighs, onion, baby bell peppers, and potatoes
  • Stir until everything is evenly coated
  • Transfer vegetable-chicken mixture to the prepared baking sheet and spread in an even layer
  • Scatter lemon slices over the vegetables leaving chicken exposed to brown
  • Bake in preheated oven for about 40 minutes
  • Check chicken after 20 minutes as oven temperatures vary
  • Remove from oven and top with feta, parsley, and olives
  • If you do not like olives, replace with capers or artichoke hearts

  1. I am so in love with sheet pan dinners — even here in Florida where comfort food is not quite as badly needed as it would be in snowy “up North”. This really sounds delicious. Olives and feta cheese would add the perfect touch. Happy New Year!! (only a little over a week late — not so bad for slow old me!)
