A simple baked onion has so much flavor. Today’s recipe is for easy roasted onions with delicious caramelized surfaces. Nearly all onions can be mellowed into sweetness by roasting. They are a perfect side with roasted meat and chicken.

Roasted Onions
Easy roasted onions are the perfect side for any meal.
Servings 8 onion halves
Ingredients
- 4 medium onions
- 2 tbsp olive oil
- salt and pepper to taste
- 2 tbsp balsamic vinegar or apple cider vinegar
- optional fresh herb for garnish
Instructions
- Preheat oven to 400 F
- Peel onions and cut in half
- Place onions in bowl
- Salt and pepper to taste
- Toss halves with oil
- Place onions, cut-sides down, in a baking pan or sheet (or even a iron skillet)
- Bake for 25 to 30 minutes until onions are tender and cut surface is golden
- Remove from oven and drizzle balsamic or apple cider vinegar on halves
- Optional herb garnish
- Serve warm

I never tried roasting a whole onion like this. It looks like a nice side dish for a meat entrée.
