Heirloom tomatoes, peaches, fresh basil, and fresh mozzarella are layered and topped with a simple balsamic vinaigrette in this delightful summer salad with straight from the garden taste. It only takes minutes to make, but with fresh ingredients, the result is a remarkable blend of flavors.
Peach Tomato Caprese Salad
Use organic when available. Makes 4 servings
Ingredients
Vinaigrette
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Kosher salt
Salad
- 2 large heirloom tomatoes, thinly sliced
- 2 ripe peaches : halved, pitted, and sliced into half moons
- 6 fresh basil leaves
- 1 ball fresh mozzarella, thinly sliced (about 8 oz)
Instructions
Vinaigrette
- Whisk olive oil, balsamic vinegar, and 1 pinch Kosher salt in a bowl until dressing is smooth
Salad
- Arrange ingredients on a platter: Alternate tomato slices, peach slices, basil leaves, and mozzarella slices in layers
- Drizzle dressing over salad and sprinkle remaining salt on top

That is SO beautiful. I am into trying different flavor combinations this summer — have been doing various watermelon/tomato/ salad recipes. But peach and tomato is not one I would have thought about, but now really want to try! It’s still salad time even up here in the Pacific Northwest!!
