It’s August with all its summer heat. Today’s recipe is a simple sauté of two of the season’s most bountiful crops, fresh corn kernels and zucchini. Nothing beats the fresh taste of vegetables. The classic sauté begins with butter. I am using 1/2 butter and 1/2 olive oil. For vegan, use vegan butter and/or olive oil. Olive oil adds a rich flavor to the buttery veggies.
I am just adding a little garlic and onion to the zucchini and corn mix. I enjoy the flavor of fresh vegetables without a lot of spices, but you can also add bell pepper, red pepper, or a little spice for more zing. This recipe is just a starting point for you to make it custom for your family. Add cheese for a vegetarian dish. Add cooked chicken for a one pot meal.
Fresh Zucchini & Corn Sauté
Use organic when available. Serves 4
Fresh Zucchini & Corn Sauté
Ingredients
- 2 tbsp butter or vegan butter
- 2 tbsp olive oil
- 1/2 small white onion diced
- 1 clove garlic crushed or diced
- 3 ears of fresh corn, husks and silk removed
- 3 small zucchinis diced
- 1/2 Optional red pepper diced
- salt and pepper to taste
Instructions
- Cut kernels from ears of corn
- Heat butter and oil in pan over medium heat stirring occasionally for 1 to 2 minutes
- Add onion and cook for about 4 minutes
- Add garlic, stir, and cook for about 1 minute
- Add corn kernels and zucchini
- Optional add red pepper diced
- Mix veggies and cook for about 6 minutes stirring occasionally
- Season with salt and pepper
- Optional garnish with fresh basil or cilantro

My friend Ron gave me a Zucchini and instead of cooking it I made 4 loaves Zucchini bread. They were so tasty. The last two I put blueberries in the loaves and wow, it was fantastic. I can’t wait to get another a zucchini so I can make more Zucchini loafs .

Zucchini grows prolifically in our area here in Oregon. We don’t garden but the Farm Markets are overflowing with it as are everybody else’s gardens. I used to think it was because it liked our cooler summers, but it has been hot this year and still it does well! Anyway — we’ve always liked it and that’s a good thing! And can always use new ideas. I’ve sauteed it for years, but never thought of adding corn which is a great (and colorful) idea!
