Today’s recipe is a colorful and very tasty mix of chicken, mango, and avocado in a spicy lime dressing. It’s a hearty, filling summer meal with amazing flavors. Start with a bed of mixed baby lettuce or baby spinach. Mix cooked chicken whether it was grilled, sauteed, or cooked on a rotisserie at the supermarket with avocado and mango. I strongly suggest you make just what you can eat today as it does not store well. Both avocados and mangos should be ripe without being mushy for best results. Top it with the spicy lime dressing and enjoy the mix of flavors.
Tropical Chicken, Avocado, & Mango Salad
Use organic when available. Serves 4
Tropical Chicken, Avocado, & Mango Salad
Ingredients
Salad
- 2 cups cubed or shredded cooked chicken
- 1 medium mango peeled, seeded and diced
- 1 avocado peeled, pitted and diced
- 1 green onion chopped
- 6 oz mixed baby salad greens or baby spinach
Dressing
- 1/4 cup water
- 1 tbsp brown sugar
- 1/3 cup lime juice
- 1/2 cup chili garlic sauce
Instructions
Dressing
- In a saucepan over medium-high heat, stir together the brown sugar and water
- Bring to a boil, then pour into a medium bowl
- Stir in the garlic chili sauce and lime juice
- Set the dressing aside to cool
Salad
- Mix salad greens and onion in a large bowl
- In medium bowl toss together the chicken, mangos and avocados
- Spoon chicken-mango-avocado mix on lettuce mix in big bowl
- Pour dressing over the top
- Serve immediately

It is a beautiful salad! very summery. Mangos aren’t very good here, for some reason we don’t seem to get the good ones and they’re very expensive (might have something to do with not living in the tropics do you think LOL!) You are making me homesick for Florida.

I would have never thought of using chicken with these two. It looks very colorful and it sounds so tasty. The only problem is mangos & avacados may not be good around here.

can you get the unripe firm green avocadoes? Place in a paper bag for about 2 or 3 days. Check firmness at 2 and 3 days. If still hard, leave for another day. Take from bag and place in refrigerator. Cut and eat with a little garlic salt and lemon juice. Yum yum!
