Savory Watermelon Pizza

Most of us have seen fruit pizzas that have no grain. Whether you are avoiding gluten or grain, today I’m talking about watermelon pizza. A thick slice of watermelon cut into wedges is the ‘crust’ of this summery pizza. Top with fresh fruits and veggies for refreshing flavor and crisp texture. You may prefer the sweet fruity versions that add more fruit to the slice of watermelon. I think of these as a dessert. Try adding strawberry slices and bueberries.

Today I’m going for a great appetizer, snack, or light lunch that mixes creamy, briny, salty feta and olives with sweet, juicy watermelon. You may hesitate and think it’s a crazy combination, but they complement each other perfectly. It’s reminiscent of a Greek salad with watermelon instead of lettuce. Scatter chopped fresh basil and drizzle with extra virgin olive oil mixed with a sweet vinegar like balsamic or rice. If you prefer, you can use fresh mint instead of basil. My favorite olives are green while my sister prefers black. I suggest a mix of the two, but you could use just one kind if preferred.

Savory Watermelon Pizza

Creamy, briny, salty feta and olives with sweet, juicy watermelon slices make a great light lunch, snack, or appetizer.

Ingredients

  • 1 large seedless watermelon
  • 1 1/2 cups crumbled feta cheese
  • 1/2 cup sliced green olives
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup chopped fresh basil or mint
  • black pepper to taste
  • 2 tbsp balsamic or rice vinegar
  • 2 tbsp extra virgin olive oil

Instructions

  • Slice watermelon in half lengthwise, then each half lengthwise into quarters.
  • Cut uniformly thick slices from the center of each quarter.
  • Place 4 quarters on a plate for a round pizza look.
  • With a small spoon remove any white seeds.
  • Use tip of spoon to make indentations in red fruit for toppings.
  • Scatter feta cheese, olives, and basil or mint over the slices and season lightly with freshly ground black pepper.
  • Drizzle each slice with a touch of vinegar and olive oil.
  • Serve immediately or cover and refrigerate until needed.

  1. I would never have thought of using a watermelon as a pizza base, it does sound incredibly refreshing though…or that’s maybe because here in the UK we are having a very untypical heatwave! I’m not a fan of olives but I don’t mind them if they are mixed with other things. A bowl of olives would be a big miss but I actually like them on regular pizza so I’d probably like them on this. I might give it a go, I don’t think my family would be impressed but I could just make a piece for myself. #mmbc

  3. And here I thought we were brave to try watermelon salad — something we really experimented with last year to find our favorite recipe. The one we love best has a lot of the same ingredients (pretty much all except the olives) so I am not as surprised as some of your readers probably are. A fun idea — I love that you’re not afraid to think outside the usual box!!

    1. Yes I’ve shared watermelon feta salad before. It’s similar ingredients but on a slice of watermelon. I’ve tried all kinds of things – sometimes I say that’s good and other times I throw it away!
