Slow Cooker Pork Chops

I love the ease of slow cooker meals. Today’s recipe is a tasty pork chop recipe. Put it on low for 5 hours and the meat is tender and falling apart. The sauce is so tasty. I like it with rice and broccoli, but it works well with baked potatoes or mashed potatoes too.

Slow Cooker Pork Chops

An easy and tasty entrée for busy days but special enough for company.

Ingredients

  • 6 thick cut pork chops
  • 1 tbsp olive oil
  • 1 tbsp seasoning salt
  • black pepper to taste
  • 1/4 cup low sodium soy sauce
  • 1/4 cup local honey
  • 1/2 cup ketchup
  • 2 cloves garlic minced
  • 1/2 cup broth or water
  • 1/2 cup crushed pineapple

Instructions

  • Put oil in large pan over medium heat
  • Use seasoning salt and black pepper on pork chops
  • Brown chops for 5 minutes
  • Flip chops and brown on second side
  • Place chops in slow cooker
  • Mix rest of ingredients and pour over chops
  • Cook on low for about 5 hours
  • Check meat and sauce and adjust seasonings as needed
  • To use sauce as gravy, if sauce is too thin, add 2 tbsp corn starch to 2 tbsp of sauce in a small glass bowl
  • Mix well and stir back into sauce
  • Serve pork chops garnished with sauce and chopped green onions or fresh herbs
  • Goes well with rice, baked potato, or mashed potatoes

I’m starting to enjoy my slow cooker again (used to love it when I was working and with kids) and then got away from it , but just lately I seem to run out of steam in the late afternoon, so a dinner that I prepared while still fresh in the morning is now right up my alley…. so yay, perfect. (Bookmarked for when we get home to Oregon. This week we’re just eating up everything that’s already in the cupboard and frig as we get ready to go.)
