Today’s recipe is a great spring & summertime salsa with fresh peaches, creamy avocado, bell pepper, onions, and jalapeno. Use as a topper for grilled fish or chicken, or just dip tortilla chips in it.
Peach & Avocado Salsa
Use organic when available. Serves 4. #Vegan, #gluten-free
Peach & Avocado Salsa
Ingredients
- 2 fresh peaches, peeled, pitted and cubed
- 1 avocado peeled, seeded, and cubed
- jalapeno pepper, seeded and minced
- 1/2 red onion, minced
- 1/4 cup chopped fresh cilantro (or to taste)
- 1/2 red bell pepper seeded and minced
- 2 cloves garlic, grated
- 1/2 lime juiced
- 1/2 lemon juiced
- salt and pepper to taste
- optional corn
Instructions
- Chop or blend all ingredients until bite-size
- In a bowl gently mix peaches with every ingredient except for avocado
- Season with salt and pepper to taste
- Cover bowl and refrigerate for at least 30 minutes
- Fold avocado into peach mix and served chilled
