Slow Cooker Chicken Cacciatore

Today’s recipe is an easy dish that brings lots of warmth, flavor, and comfort but with only 15 minutes prep. Italian chicken cacciatore usually uses a mix of chicken parts and is slowly simmered on the stove.  I like a healthy chicken cacciatore slow cooker approach. Making chicken cacciatore in the crock pot achieves the same tenderness and depth of flavor as the slow-simmer method, with less hassle.

Chicken cacciatore resembles a stew that is packed with vegetables, tomato sauce, and lots of yummy seasoning. I like to use skinless bone-in chicken thighs for the flavor and nutrition. If you prefer chicken breasts, it will require more cook time. Use a meat thermometer to determine when the meat is 165 degrees F for a perfect time.  The best part is that despite it’s ease, it is special enough for the main course when entertaining friends. You can serve it over whole grain pasta, brown rice, polenta, cauliflower rice, or even roasted spaghetti squash.  A healthy meal that’s tasty and easy to make. You can’t beat that.

Slow cooker chicken cacciatore is an easy dish that brings lots of warmth, flavor, and comfort but with only 15 minutes prep.

Ingredients

  • 6 bone-in chicken thighs ( or approx 2 lbs boneless)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 medium onioin chopped
  • 3 clove garlic minced
  • 1 tbsp balsamic vinegar
  • 28 oz crushed tomatoes
  • 1 medium green pepper deseeded and chopped
  • 8 oz sliced baby bella cremini mushrooms
  • 2 tsp Italian seasoning

Instructions

  • If chicken isn't skinless, remove skin & any excess fat
  • Season chicken with salt and pepper
  • Spray slow cooker with non-stick oil
  • In large pan on stove heat 1 tbsp olive oil on medium high
  • Place chicken in pan and brown on one side for 3 to 4 minutes
  • Flip and brown other side for about 2 minutes
  • Transfer chicken to slow cooker
  • Lower pan heat to medium
  • Add second tablespoon of olive oil to pan to heat
  • Add onion and cook for 3 minutes
  • Add garlic and balsamic vinegar
  • Cook for 1 minute
  • Transfer onion mix and pan drippings to top of chicken in crock pot
  • Top the chicken with green bell pepper, mushrooms, and Italian seasoning
  • Pour tomatoes over chicken and vegetables
  • Cover and cook for 4 hours on high or 5 to 6 hours on low
  • Use meat thermometer to determine when meat reaches 165 degrees F
  • If sauce is too thin, you can remove chicken & lid and continue to cook on high for 1 hour to thicken it
  • You can serve the chicken thighs whole or remove the bone and chop chicken
  • When sauce is thickened, return chicken to pot
  • Serve over pasta, polenta, rice, spagetti squash, or vegetables of choice
  • Optional garnish of grated cheese
