Today’s recipe is another slow cooker soup based on classic potato soup. In an effort to make this classic a little healthier, I used low fat dairy products, chicken (or turkey) bacon, and low sodium broth. The soup still tastes wonderful but it is a little easier on your diet.

I love to saute the onion, carrots, celery and garlic in a little olive oil on the stove betore adding it to the slow cooker. This really enhances the flavor. You can top the soup with your choice of garnish. I usually suggest Greek yogurt, bacon bits, cheese, or green onions. For a vegetarian soup, use vegetable broth and drop the bacon.
Slow Cooker Potato Soup
Use organic when available. Serves 7 to 8
Slow Cooker Potato Soup
Ingredients
- 6 large Yukon gold potatos peeled & cut into small cubes
- 40 oz low fat chicken or vegetable broth
- 1 tsp salt and pepper
- 1/8 tsp red pepper flakes
- 3 celery stalks chopped
- 6 carrots peeled and sliced
- 1 medium sweet onion diced
- 2 clove garlic peeled and minced
- 3 tbsp olive oil
- 1/2 tsp dried tarragon
- 1/2 tsp dried basil
- 1/2 tsp dried dill
- 1 1/2 cups fat-free half and half
- 1 1/2 cups low-fat shredded cheddar cheese
- optional garnish: 6 chicken or turkey bacon slices cooked and crumbled
- optional garnish: low-fat Greek yogurt
- optional garnish: sliced green onions
Instructions
- Spray inside of slow cooker with cooking spray
- Set crock pot on high
- Place potatoes in bottom of slow cooker
- Pour broth over potatoes and add salt, pepper, and red pepper flakes
- Place olive oil and carrots in skillet on stove
- Saute for about 3 minutes
- Add celery and onion
- Cook on medium-high until onion is translucent
- Add garlic and saute for 30 seconds
- Add sauteed vegetables to crock pot
- Cook on high for 2 to 3 hours and potatoes have softened
- Using potato masher mash about half of vegetables in slow cooker
- Add half and half, cheese, and herbs to pot
- Mix well and continue to cook until cheese melts
- Serve with optional garnish of Greek yogurt, green onions, and/or grated cheese
- Serve soup with crusty bread and a green salad

In the Slow Cooker Potato Soup recipe, step 4 in the Instructions starts out with the words “Pour broth over chicken….”
I didn’t see chicken mentioned as an ingredient. Could you clarify?

I’m so sorry. In my head I was thinking of the chicken broth I use but didn’t really want to use the word chicken. Some folks might want to use vegetable broth to make it vegetarian. You pour broth over the potatoes.
