Today’s recipe is another slow cooker soup based on classic potato soup. In an effort to make this classic a little healthier, I used low fat dairy products, chicken (or turkey) bacon, and low sodium broth. The soup still tastes wonderful but it is a little easier on your diet.

I love to saute the onion, carrots, celery and garlic in a little olive oil on the stove betore adding it to the slow cooker. This really enhances the flavor. You can top the soup with your choice of garnish. I usually suggest Greek yogurt, bacon bits, cheese, or green onions. For a vegetarian soup, use vegetable broth and drop the bacon.

…this would be wonderful on a cold winter night!
In the Slow Cooker Potato Soup recipe, step 4 in the Instructions starts out with the words “Pour broth over chicken….”
I didn’t see chicken mentioned as an ingredient. Could you clarify?
Thanks.
I’m so sorry. In my head I was thinking of the chicken broth I use but didn’t really want to use the word chicken. Some folks might want to use vegetable broth to make it vegetarian. You pour broth over the potatoes.
I love potato soup and haven’t made it in ages! Thanks for putting this up — and now, while it is so cold!
I know I’m cold as we went down to freezing Sunday early hours and this morning. Soup time for me!
This sounds delicious! I love potato and leek soup but I’ve never thought of adding cheese :o)

It sounds good Carol but I love my wife’s chicken soup on a cold day which is often around here. See ya my friend.

you really can’t beat good chicken soup!
I don’t think I have ever had potato soup before, this sounds great for the colder months. x
The half and half is such a smart way to make this soup extra rich and creamy… and the bacon is pure genius. Bacon makes everything better!
I think I’ll make that for my next batch of soup – yummy! Thanks for sharing your recipe. 🙂
Gracias por la receta se ve muy rica. Te mando un beso.
Great to have another add on to my list of slow-cooker recipes. This one looks delicious! Thanks Carol 🙂
I hope you like it!
I would love this soup even without the cheese and bacon. Perfect loaded soup for the winter.
I love potatoe soup but I rarely eat it because of the fat content. Thanks for sharing a less fattening version at #aclwcc. I will definitely pin for later.
I agree – I like less fat too. Thanks for the pin.
This looks like a nice winter warmer. I will be pinning for later! Thanks for sharing Carol. 🙂
