The storms crossed the country last week and even came down my way in Florida. It wasn’t really cold but a little cooler with rain. I am craving a hot pot of soup. This is a great, hearty soup for autumn through spring. When you need something warm to drink while you snuggle in a blanket, put a pot on and dinner is ready very quickly.
If you hate fighting a hard-shelled butternut squash, check out the packs of frozen organic cubed butternut squash at Aldi. Inexpensive and easy on my arthritis – use 3 packs for the soup. Chop some veggies, saute and then simmer. Within one hour, you have a thick and tasty soup filled with nutrition.
Butternut Squash Soup
Use organic when available. Serves 4
For vegan, use vegetable broth
Butternut Squash Soup
Ingredients
- 3 tbsp olive oil
- 1 small onion, diced
- 2 celery stalk
- 2 garlic cloves, minced
- 4 cups cubed butternut squash
- 2 medium potatoes peeled & cubed
- salt and pepper to taste
- 1/4 tsp smoked paprika
- Pinch nutmeg
- 4 cups low-sodium chicken or vegetable stock
Instructions
- Place olive oil and celery, onion, squash, and potatoes in large pot
- Saute about 5 minutes and add garlic
- Combine with stock and seasonings
- Simmer 20 minutes
- Cool and blend in batches or use immersion blender
- Garnish with herbs, yogurt, green onons, croutons or cheese, optional
- Serve with crusty bread or whole grain crackers

I love butternut squash soup and I’m so glad they sell the squash already chopped. I think I could kill myself actually taking a knife to the real thing! Thanks for this one.
Did I ever tell you about the last time I tried to cut one in two? My knife got stuck in the middle of the butternut squash. I had to call Vickie next door and ask her to come save me!
