Kale, Apple & Feta Salad

Autumn is the perfect time for a green salad with fruit and cheese.  Today I’m using kale. You cut around the tough stem and thinly slice kale ribbons.  Kale ribbons work well for salads and soups. Chop in one direction to make small pieces. Rotate to other side and repeat for all the kale leaves.  Discard the large stems. Then you should place the kale in a large bowl, sprinkle it with salt, and massage with your fingers. It does make a big difference in taste.  If you are someone who really hates kale, I suggest you look for baby kale.  Add chopped apples, pine nuts, dried cranberries or raisins, and feta cheese. Optional addition would be a garnish of walnut or pecan pieces instead of pine nuts. I like using an apple cider vinaigrette, but you could use a vinaigrette of your choice.

Kale, Apple, & Feta Salad

A delicious fall salad of massaged kale, apple, and feta with a garnish of dried cranberries and pine nuts. Perfect for holiday meals.

Ingredients

Salad

  • 1 bunch kale
  • 1 tsp salt
  • 1 large apple diced
  • 1/3 cup feta cheese
  • 1/4 cup fruit juiced sweetened dried cranberries or raisins

Dressing

  • 1/3 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1 garlic clove minced
  • 1 tbsp Dijon mustard
  • 1 to 2 tbsp maple syrup or honey
  • salt and pepper to taste

Instructions

  • Place kale in large salad bowl
  • Sprinkle salt on kale and massage with fingers for 2 minutes
  • In a separate small bowl, combine dressing ingredients
  • Whisk until well combined.
  • Pour vinaigrette over kale and toss to coat
  • Garnish with apples, cranberries, pine nuts, and feta
  • Optional garnish of walnut or pecan pieces instead of pine nuts

  1. I am not a fan of kale but that dressing sounds divine! I’m a big fan of apple and cheese, but I don’t think I’ve tried apple and feta.
