This simple chicken recipe is easy and flavorful. The garlic, lemon, mustard, and rosemary marinade blend for a nice fresh flavor. This simple summer grilling recipe can easily be a mainstay of your menu. Add a salad or vegetables and your dinner is complete.
I have my live rosemary bush in the flower bed by my front door and love the scent of fresh rosemary. You can use dried rosemary for the dish also. Rosemary and lemon have such a lively scent and flavor. They are two of my favorite ingredients in cooking.
Grilled Rosemary Chicken
Use organic when available. Serves 4.
Grilled Rosemary Chicken Breasts
Ingredients
- 4 boneless skinless chicken breast halves
- 8 clove garlic minced
- 3 tbsp olive oil
- 1 1/2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp fresh rosemary minced
- salt and pepper to taste
Instructions
- Place chicken breasts into a zip lock plastic bag
- Mix garlic, olive oil, rosemary, mustard, lemon juice, ground black pepper, and salt together in a bowl
- Reserve 1/8 cup of marinade
- Pour marinade over chicken
- Close bag and massage marinade into chicken
- Place chicken into refrigerator for 4 hours
- Remove chicken from refrigerator and let stand at room temperature 30 minutes
- Heat grill to medium high heat
- Oil grate
- Grill chicken for 5 minutes
- Turn chicken over and baste with reserved mainade
- Grill 5 minutes
- Remove to platter and cover with aluminum foil
- Let chicken sit for 5 minutes
- Garnish with lemon slices and fresh rosemary

…rosemary is something that I never have.
I’ve done something like this with rosemary with lemon. It taste so great. Rosemary is very important in my spaghetti sauce.

I’m not a big fan of rosemary, but this does look delicious.
Rosemary can be a little too strong in flavour for my liking, however the overall combination of flavours makes this a really interesting dish, so I would probably include it. I always choose skinless, boneless fillets of chicken anyway!
